Rocket, goat cheese and almond salad

IMG_7524This versatile little rocket salad is easy to prepare, nutritious and simply delicious.

Rocket or Eruca sativa is a popular salad vegetable native to the Mediterranean area from Morocco and Portugal in the west to Syria, Portugal and Turkey in the east.

Little wonder then that goat cheese and toasted almonds, which are also traditional foods from these areas, compliment each other so well.

The original fruit used in this recipe was fresh, thinly sliced figs however these can be hard to find in the southern hemisphere so we have added pears and stone fruits as a variation.

Ingredients

120g Rocket, washed and drained
180g Goats cheese, diced
35g almonds, toasted
2 raw peaches, unpeeled,thinly sliced.

Method

  1. Wash the rocket in a colander, drain well then place the rocket in a salad bowl.
  2. Add the diced goat cheese, toasted almonds and thinly sliced peaches
  3. Toss well and chill before serving

Serves 6

Each serving contains: Energy 537kJj/128 kcals; Protein 6.9g; Fat 9.4g; Saturated fat 4.5g; Carbohydrate 4g; Sugar 3.8g; Dietary fibre 1.5g; Sodium 436mg.

Variations

  • The raw peaches can be substituted with thinly sliced, unpeeled raw nectarines, pears, figs or peeled mango.
  • Other lettuce greens can be combined with the rocket such as baby spinach, cos or iceberg lettuce.
  • Dressing suggestions: Caramelised balsamic or Thai coriander and lime.
