Here’s some of our favourite concoctions for a hot lunch:

  • Ricotta cheese, spinach, tomato pesto, mozzarella cheese and mushrooms
  • Basil pesto, mozzarella cheese and tomato
  • Fruit chutney, basil pesto, onion, cheese and pastrami
  • Tuna, corn, tomato, ricotta and lemon balm
  • Chicken, basil pesto, mozzarella cheese and tomato
  • Roasted pepper, aubergine, mushroom, tomato pesto and feta cheese
  • Leek, char grilled capsicum and tuna
  • Leftover curried rice and vegetables with tuna or chicken

You can also use creamed corn, chilli or baked beans and spaghetti.
