Strawberry sorbet

It’s great over the summer to use up berry fruits while they are still in season. This easy recipe is full of flavour and something you could teach the children to make as well. You may like to also try it in a smoothie and the recipe would lend itself to other berry fruits as well as mango, peaches or nectarines


1 punnet strawberries
½ cup plain yoghurt
1 cup water
½ cup sugar
1 egg white


Bring the water and sugar to the boil, lower heat and simmer for 10 minutes. Cool.
Take stalks off strawberries and blend in a food processor to make a puree. Add strawberry puree to the sugar water. Freeze until firm. Return to the food processor and process until the ice is smooth. Carefully beat in the yoghurt, fold in the egg white and freeze overnight.
